Broccoli soup and Protein pancakes

Tried a new recipe for broccoli soup the other day and also made some protein pancakes together with Daan. I was happy with the broccoli soup, was really simple and quick to make, just should have mixed it a little bit better to make it even smoother.

Recipe for 2 (big) portions:

1 onion

2 garlic cloves

3 dl coconut milk (works with water or any other type of milk as well)

2-3 heads of broccoli

olive oil

salt + pepper

juice from half a lemon

Start with chopping the onion and the garlic and then put a little olive oil in a pot and add the onion and the garlic for a few minutes, add the broccoli for another few minutes before adding the milk. Let boil for about 5 minutes and then use a mixer to make the soup smooth. Add spices, lemon juice and more milk if necessary. That’s it, ready to serve!
