Orange Lentil Soup

Made an easy lentil soup for dinner last night, and will eat the left overs today for lunch. Always good to make
Too much when you cook so you don’t have to cook the day after! It was a really easy recipe:

1 onion
Olive oil
2 cloves garlic
10 dl water
2 dl lentils (red or green)
1/2 cube vegetable broth
400g diced tomatoes
Pepper spice
Chili spice
1/2 lemon (juice)

Chop the onion and press the garlic and put in a pot with some Olive oil. Drain the lentils and put in with the rest of all the ingredients and let boil under the lid as long as the kind of lentils you choose has to boil. I used green lentils and let it boil on low heat for 30 minutes. If you’d like you can add some parsley on top to add some flavor. I served it with a crisp bread with cottage cheese and some mini carrots! 😊
