Blueberry Smoothie 

My post-workout snack yesterday was this simple & healthy smoothie and some of the crisp bread I made a few days ago. These are the ingredients I mixed together for the smoothie:

  • 1 banana
  • 3 dl almond milk
  • 1.5 dl frozen blueberries
  • 1 teaspoon acai powder

Healthy homemade crisp bread

I tried a new kind of homemade crisp bread yesterday while the oven was on baking the taco-pie! I got this recipe from Lisashealthspo and it turned out great (Her blog is in Swedish). 

The crisp bread is made of only seeds, water & salt so it’s all free from gluten, dairy & sugar and it’s also paleo friendly! 

These are the few ingredients you need:

  • 0.5 dl pumpkin seeds
  • 0.5 dl sunflower seeds
  • 0.5 dl sesame seeds
  • 0.5 dl chia seeds
  • 2 dl hot water
  • A sprinkle of sea salt

-> Mix everything in a bowl and let rest for 5 minutes. After 5 minutes pour to dough on a baking paper on a tray and put in the oven on 200 degrees celsius for 20 minutes. Take out and cut squares carefully and then put it back in the oven for 40 more minutes. Take out and let cool before you eat!

My favorite toppings for this crisp bread are: 

  • Brie cheese and sliced pear
  • Cottage cheese and peanut butter
  • Cottage cheese and avocado
  • Avocado and herb salt
  • Peanut butter and sliced banana
  • Sliced tomato, thin mosarella and basil

– our just eat it plain exactly as it is, or use it as topping for your yoghurt, oatmeal, smoothie or salad!

Gluten free Taco-Pie

Made an gluten free taco-pie last night for dinner for the first time and it turned out really well. It is very easy but it takes some time to prepare everything. The ingredients you need are:

For the crust:

  • 2 dl almond flour
  • 0.75 dl coconut flour
  • 1 tablespoon olive oil
  • 2 dl water
  • Salt & pepper (and I added some oregano as well)

For the filling: 

  • 500 g beef
  • 1/2 can corn
  • 1 onion
  • 1 can diced tomatoes
  • Coconut oil or olive oil for the pan
  • Spices(I used about 1 teaspoon of each: chili, paprika, cumin and black pepper)

For the top layer:

  • 2 eggs
  • 1 dl almond milk

-> Turn the oven on 200 degrees celsius, start with the crust and mix everything in a bowl until a dough. It might be a little crumbly but that’s fine. Press it out in a pie form. Put in the oven for 10 minutes and then take it out and let it rest.

Then start with the filling, fry onion in some coconut oil. When see through take it off and add the beef instead. Fry beef until brown and then add the rest of the ingredients. Let boil on low-medium heat for about 10 minutes. Meanwhile mix the eggs and the milk together in a bowl.

When the meat sauce is done pour it in the pie form until it’s filled to the top and then pour the egg mix on top. Put in the oven for about 45 minutes. Let cool a little before you dig in and serve with a green salad (I was out if salad so ended up with only fresh tomatoes on the side) 

The pie-crust taste almost like cookies hehe I’m sure you will love it!

Kale Chips

Looking for a healthy snack? Then you have to try to make your own kale chips, I’ve made it a couple of times and it’s so good that I always eat everything up right away. But that’s fine because it’s healthy and full of good nutrients! The few ingredients you need are:

  • 1 bundle of fresh kale
  • 1 tablespoon olive oil (I used melted coconut oil instead)
  • A sprinkle of sea salt 

-> Break the kale into pieces and put on baking paper on a baking tray. Pour the oil on top and mix a little. Then sprinkle on some sea salt and put in the oven on 225 degrees celsius in 5-10 minutes. Keep an eye on them so they don’t turn black! 

Easy, healthy, & delicious!

I just read this great blog post by and I had to share it. All the attention to different diets these days are scary, and it is difficult to know what is “good or bad”. Finding what works for you to live a balanced and happy lifestyle is the most important thing, and it might be very different from the people around you or what you see on social media. These day’s it seems that if you’re not on the #paleo#glutenfree#dairyfree#vegan#, etc…bandwagon, then my friend – your food choices are just substandard. Yes, they’re all good in my books and I include each and every one of those above mentioned hashtags in my diet, and I congratulate all who maintain these diets successfully, but that’s not my issue here. The issue I have is with the general lack of knowledge on what it truly means to follow that particular diet.

Being vegan is just like socool. “No thank you, I don’t eat meat…but I’ll happily polish off those greasy french fries”! Or “yeah man, we’re doing Paleo style here, all bacon and beef”! I doubt that in the hunting and gathering day’s there was a bounty of bacon for breakfast and steak for dinner on a daily basis. Superfood Smoothie

Made the simplest Thursday treat earlier today to boost my energy & immune system. It’s super nice weather here today, so I got some summer feelings. That’s why I made another pink summer smoothie (you all know how much I like smoothies with raspberries). The ingredients I used was: 

  • 2 dl almond milk
  • 1 dl coconut water
  • 1 banana
  • 2 dl frozen raspberries
  • 1/2 teaspoon acai powder 
  • 1/2 dl goji-berries

-> Then just mix it all in a blender and enjoy! Easy, healthy & delusions!
