Made a simple but really good dinner last night after a day full of studying, rehab & two final exams. Just made a quick chicken dish with some mixed vegetables. This is what you need:
- Chicken breast fillets
- Frozen mixed vegetables (I had broccoli, cauliflower, & carrots)
- Spices (curry, paprika, chili powder)
- Some coconut oil
-> Start by cutting the chicken in medium sized pieces. Put some coconut oil in a pan and set on medium-high heat. Add the chicken to the pan and add the amount of spices you would like. Fry the chicken about 5-10 minutes until it is all white and done inside and have a light brown color. Meanwhile put water in a sauce pan and bring to boil. Then add the vegetables and let boil in low-medium heat until soft (about 3 minutes).
Simple, healthy & delicious!
