Made an gluten free taco-pie last night for dinner for the first time and it turned out really well. It is very easy but it takes some time to prepare everything. The ingredients you need are:
For the crust:
- 2 dl almond flour
- 0.75 dl coconut flour
- 1 tablespoon olive oil
- 2 dl water
- Salt & pepper (and I added some oregano as well)
For the filling:
- 500 g beef
- 1/2 can corn
- 1 onion
- 1 can diced tomatoes
- Coconut oil or olive oil for the pan
- Spices(I used about 1 teaspoon of each: chili, paprika, cumin and black pepper)
For the top layer:
- 2 eggs
- 1 dl almond milk
-> Turn the oven on 200 degrees celsius, start with the crust and mix everything in a bowl until a dough. It might be a little crumbly but that’s fine. Press it out in a pie form. Put in the oven for 10 minutes and then take it out and let it rest.
Then start with the filling, fry onion in some coconut oil. When see through take it off and add the beef instead. Fry beef until brown and then add the rest of the ingredients. Let boil on low-medium heat for about 10 minutes. Meanwhile mix the eggs and the milk together in a bowl.
When the meat sauce is done pour it in the pie form until it’s filled to the top and then pour the egg mix on top. Put in the oven for about 45 minutes. Let cool a little before you dig in and serve with a green salad (I was out if salad so ended up with only fresh tomatoes on the side)
The pie-crust taste almost like cookies hehe I’m sure you will love it!
