Chicken, Spinach & Sun-dried tomatoes in a Garlic sauce

After clinching my last college season match ever my mum made my favorite dish today! Perfect end of a perfect day. Tasted better than ever! The dish is actually not very complicated at all and it tastes best with quinoa pasta and a fresh salad on the side. What you need for 4 people is: 

  • 1/2-1 package of gluten free quinoa pasta 
  • 4 chopped chicken fillets 
  • 1 can sun-dried tomatoes
  • 1 bag frozen baby spinach 
  • 2-3 chopped garlic gloves
  • 1 can unsweetened coconut milk
  • 1 jar sour creme (lactose free)
  • Black peppar, salt and basil
  • A little soya sauce
  • A little ketchup 

-> Start with frying the chicken and when it’s brown, add garlic and spinach and let fry for a few minutes. Then add the rest of the ingredients and let boil on low-medium heat for about 10 minutes. Follow the instructions on the pasta package. Then try the sauce to see if you need to add more of any if the spices.  Serve with a fresh mixed salad!
