Chicken-Spinch Salad

My parents and I went to Beppes & Gianni’s last night for dinner and I had one of my favorite salads; chicken-spinach. It’s pretty easy to make at home as well, this is what you need for one portion: 

  • 1 chicken fillet 
  • A bunch of fresh spinach 
  • 1/4 red onion chopped in small pieces 
  • 1 tomatoes chopped 
  • 1/2 dl roasted pine-nuts 
  • Balsamic vinegrette 
  • Some black pepper and salt

-> Start by cutting the chicken in pieces and fry (or if you have a grill, grill them) in coconut oil, add pepper and salt and fry until all done and they have a light-brown a little crispy outside. Then put the spinach in a bowl and mix with the rest of the ingredients. Then put it all on a big plate and add the chicken on top! 




The salad is gluten free, dairy free, and paleo- friendly!
