Mango-Coconut-Vanilla balls

Experimented a little in the kitchen yesterday and it turned out great! I made these protein balls with a taste of mango, coconut, & vanilla. It’s super easy and only takes a few minutes. This is what you need for like 6 medium sized balls:

  • 1 cup coconut flakes
  • 1 tablespoon melted coconut oil
  • 1/2 cup frozen mango
  • 1/2 scoop vanilla protein powder (I used Isoflex Vanilla)
  • 1 tablespoon raw honey or other sweetener 
  • Mango cubes to have inside balls
  • Extra coconut if you want to roll them in it (I skipped this)

-> Put all the ingredients in a food processor or bowl to use a stick blender. Blend until everything is a dough. Roll into balls and put one mango cube inside each ball. Then roll in coconut flakes if you’d like. Put in fridge (or freezer) for an hour before snacking. Keep in fridge or freezer.

   

They are gluten free, dairy free and paleo-friendly(If you use a paleo-friendly protein powder)

    The point of the Paleo diet is, and I feel some people forget this, to not only diet, but to eat delicious foods at the same time. It’s the only diet I’ve come across that cuts out food groups, yet still focusses on everyone’s need to eat great food.
