Gluten & Dairy free Coconut Bread

Baked a new type of bread this morning and it turned out great! I got the original recipe from Sofia Eriksson, (she updates her blog with new exciting recipes daily, check her blog out!) but I made some changes on the way!

For 4 bread buns you need:

  • 2 eggs
  • 1 dl egg white
  • 4 tablespoons coconut flour
  • 1 tablespoon coconut flakes
  • 1/2 teaspoon baking powder

-> Start by turning the oven on 200 C. Then mix everything in a bowl until smooth. Divide it up in 4 and put on baking paper on a baking tray (the dough is kind off fluid). Put in the oven for 20 minutes, take out and flip over the buns and put back on for 5 more minutes. Take out and let cool down.

I had to try one right away and topped it with Walden Farms chocolate peanut spread and extra coconut flakes. Because how good isn’t the mix of chocolate+coconut!

You can also add different seeds or chopped nuts in the dough if you want! These buns are paleo-friendly!
