Gluten free Omelet-Pancake

Tried this new recipe earlier this week and I actually don’t know if it would classify as an omelet or pancake hehe 

It’s very easy to make! What you need for the recipe is:

  • 1 dl quark (or greek yoghurt)
  • 2 eggs
  • A sprinkle of salt
  • Coconut oil for the pan

-> Just mix the eggs, quark and salt in a bowl. Heat up a pan with the oil on medium heat. Pour the mix in the pan and let it dry slowly, about 5 minutes. Stir a little and ease up the edges so it don’t stick. Do not turn it. When it’s done slide it over to a plate and add your toppings!

I made a fresh mixed salad to go with and some cottage cheese. 

It’s gluten free, high in protein and low in carbs!
