Quick Chia-Pudding

For most chia-puddings you have to prepare them hours before, or the evening before, to give it enough time to become a pudding. But if you wake up in the morning and realize you forgot to prepare your pudding but still want it for breakfast. There is a way! 

When you wake up, mix:

  • 3 tablespoons chia seeds
  • 2 dl water
  • 1 teaspoon cinnamon

It a bowl and stir so all the seeds are covered with water. Let stand for 10-15 minutes. Then your pudding is done! 

For me this is a little to “slim” and light so I mixed the pudding with half a jar cottage cheese and then added my toppings! 

This chia-pudding is to me not really as good as the one prepared the night before with milk, but close enough! 

   
 

Toppings today were mixed berries & more cinnamon (picture 1). Then I added coconut flakes, goji berries, roasted almonds, raw walnuts, pumpkin seeds, sunflower seeds, chocolate stevia drops and Walden farms chocolate peanut spread! Delicious!

The pudding is paleo-friendly and everything including the topping is gluten free.
