Spinach Omelet

Tried something new today for lunch and it was really good! I think I found a new favorite lunch! I mixed together a green omelet. These are the ingredients: 

  • 2 eggs
  • 1 egg white
  • 1 tablespoon coconut milk 
  • 1 handful of fresh spinach
  • Some black pepper

-> Just put everything in a blender and mix until smooth. Pour in a heated pan on medium heat. When it’s possible turn it (after like 3-5 minutes) and leave it for like 1 minute on the other side. Then it’s ready to serve! Easy, quick, and healthy! 

This omelet is PALEO-friendly! I also had the best sides for it, which might be why I loved it so much! Watermelon and fresh strawberries!
