Blueberry, Rhubarb & White chocolate pie

Happy Midsummer everyone! Since we have so much rhubarb in the garden I decided to make a special healthy rhubarb pie. It was quick and easy! 

This is what you need: 

  • 3 dl pealed and chopped rhubarb
  • 2 dl blueberries 
  • 1 dl coconut cream
  • 1 tablespoon water 
  • 1 dl coconut flakes
  • 10 dates 
  • 1 dl almond flour
  • 1 teaspoon vanilla powder 
  • 1 tablespoon white chocolate chips
  • 2 tablespoon raw honey 
  • 2 tablespoons coconut oil
  • 2 tablespoons chia seeds

-> Put the oven on 175 degrees Celsius. Mix the rhubarb, blueberries, coconut cream, water, chia seeds, and honey in a bowl. Put the dates and coconut flakes in a blender. After mixing a while add the almond flour, coconut oil, and vanilla powder a blend again. Pour over the rhubarb and blueberry mix in a oven-safe baking tray with coconut oil on. Then pour over a few white chocolate chips before the you pour over the rest! Put in the oven for about 15 minutes! Let cool down and eat with for example vanilla quark!
