Tried a new flavor for my oatmeal this morning again and it turned out great! A new favorite again!
Since we have so much rhubarb in the garden I made a rhubarb oatmeal.
This is what you need for one portion:
- 1.5 dl gluten free oats
- 2.5 dl water
- 0.5 dl chopped fresh rhubarb
- 1/2 shredded zucchini
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
-> Start by putting the water and rhubarb in a pot and bring to boil. Let boil for 2-3 minutes. Then add the rest of the ingredients and stir frequently until creamy. Pour over to a bowl and add your toppings. Today I had fresh big blueberries, pumpkin seeds, roasted sunflower seeds, gojiberries, mulberries, and soy-milk.
Absolutely a breakfast I will eat again! I think I will add even more rhubarb next time to give it more flavor.
