Lemon Cookie Dough Protein balls

Something I really enjoy baking is protein balls, because it is often so easy and goes pretty fast to make. It is also the perfect snack before and after a workout with the right amount of good carbs and protein. I made two different types of gluten free protein balls today. Here is the recipe for the first ones (the other ones comes in a separate blog post):

Lemon & Cookie Dough Protein Balls

For 15 balls

  • 180g raw dates
  • 50g almonds
  • 2 scoops protein powder Cookie Dough from Fitnessguru (or that flavor you want)
  • grated peel from 1 lemon
  • 4 tablespoons coconut flakes
  • 1 dl gluten free oats
  • 1 tablespoon coconut oil
  • 2 tablespoons water
  • 2 tablespoons extra coconut flakes + grated peel from the lemon for topping

-> Put all the ingredients in a bowl and use a stick blender until smooth. Form balls and roll in the coconut flakes and lemon peel and put in the fridge for 15 minutes before eating!
