Made an gluten free and dairy free dessert pie today. The recipe is based on a rhubarb pie recipe from PTbyEmma.se but I made a bunch of changes to make it different.
Mixed Berries Pie
- 1.5 dl coconut cream
- 5 dl mixed berries (I used strawberries, raspberries, currants, and blueberries)
- 2 tablespoons raw honey
- 2 tablespoons chia seeds
- 10 dates
- 1.5 dl coconut flakes
- 1 dl almond flour
- 2 tablespoons coconut oil + a little for the baking tray
- 1 teaspoon vanilla powder
- 1-2 squares of dark chocolate
-> Start by mixing the berries, honey and coconut cream in a bowl. Add the chia seeds, stir and set to the side. Put the dates and coconut flakes in a blender and mix. Then add the almond flour, coconut oil, and vanilla powder. Spread some coconut oil around the baking tray. Pour in the berry mix, cut the chocolate in thin pieces and spread on top. Add the dates and coconut mixture on top. Put the pie in the oven on 175 C for 15-20 minutes. Take out and let cool down a little before serving it. Serve it with whipped coconut cream or vanilla quark!
