Tried a new recipe for a bread/wrap today I got from my dear friend Ida, but I changed up the spices a little bit. Have never done bread with cauliflower before so this was very interesting. It is very few ingredients, easy to make, and only takes about 15-20 minutes total. I ate one of my cauliflower wrap with peanut butter and sliced banana inside and another one with sliced avocado and herb salt. Both delicious!
Cauliflower Wrap (for about 3 wraps)
- 100g cauliflower
- 1 dl egg white
- 1.5 teaspoon psyllium husk
- a sprinkle of herb salt
- 0.5 teaspoond cinnamon
- 0.5 teaspoon cardemum
- some coconut oil for the baking tray
-> Start by turning the oven on 200 degrees. Mix the cauliflower in a mixer. Whisk the egg white until it is hard. Add all the ingredients to the egg white carefully, try to keep as mush “air” as possible in the egg white. Put some coconut oil on a baking paper on a baking tray and then pour out the egg white. Spread out the egg white until it is about 1 cm thick. It will cover almost the whole baking tray. Put in the oven for 10-15 minutes until it’s light brown. Take out from the oven and take carefully off from the baking paper.
Enjoy with a delicious topping or just as they are. My favorite toppings for any bread are:
- sliced banana + peanut butter
- peanut butter + cottage cheese
- almond butter
- avocado + herb salt
- fried egg + avocado
- soft-boiled egg
- coconut oil
