There are many variations of pesto and even if I do like the traditional basil pesto with Parmesan cheese, pine nuts, and so on the best there are other simpler, cheaper, and different types of pesto to try! Today I made a fresh avocado and spinach pesto and served it with fried chicken, znoodles, and Swedish tomatoes.
Avocado Spinach Pesto (1-2 servings)
- 1/2 ripe avocado
- 1 handful fresh spinach
- 1 handful (or more) fresh basil
- 1 small garlic clove
- juice from 1/2 lemon
- 1 dl cashew nuts
- herb salt
-> Just put everything in a mixer and blend until smooth. Taste and see if you need to add more of any ingredients, I always end up adding more basil or lemon to get the perfect fresh taste!
