Healthy Banana Bread

Had a little baking session this morning and decided to bake a healthy and gluten free alternative to banana bread. It only took about 10 minutes to prepare and then 35 minutes in the oven. Easy and quick! I found the original recipe at Mats Carlssons’ blog, but I changed it slightly.

Healthy Banana Bread

-> Start by putting the oven on 200 degrees C. Whisk the eggs, water and honey together until fluffy. Add the dry ingredients and whisk a little more. Mash the bananas in a separate bowl and then add to the dough. Whisk a little more and then pour in a bread mold covered with baking paper. Put in the lower part of the oven for about 35 minutes. Take out, let cool down and enjoy just as it is or with your choice of toppings!

My favorite toppings for banana bread:

  • peanut butter or other nut butter
  • peanut butter + cottage cheese
  • nut butter + cinnamon
  • avocado + Spinach
  • avocado + cottage cheese
  • boiled or fried eggs
  • coconut oil

Here I topped my banana bread with peanut butter, peanut butter + cinnamon and one with a perfectly fresh avocado. This is probably the best banana bread I have ever made, it tasted really good! It became perfectly fluffy and did not break easily like gluten free bread sometimes end up doing. The recipe for the other bread rolls on the picture will come up soon!

This bread is 100% gluten and dairy free. Free from added sugar and sweetener. It is also low fodmap diet.
