Cauliflower + Banana Oatmeal

I like to experiment with oatmeal recipes, and today I really succeeded with this oatless and paleo-friendly oatmeal! 

Cauliflower + Banana Oatmeal

  • 2 ripe bananas
  • 100g cauliflower 
  • 1 dl egg whites 
  • 0.5 dl water
  • 2 tablespoons chia seeds
  • 1 tablespoon flax seeds
  • Cinnamon + Cardamom 

-> Start by mashing the bananas in a pot, add the rest of the ingredients except the cauliflower. Turn on the stove and bring to boil on medium-high heat. Stir frequently. Mix the cauliflower until it looks almost like flour. When the oatmeal starts to boil, add the cauliflower and stir well. Leave on the stove and stir until it’s as creamy as you want it. 

My toppings today:

  • Raspberries 
  • Peanut-butter from MyProtein 
  • Mulberries 
  • Natural peanuts 

I also had one of my cauliflower wraps with hemp protein filled with peanutbutter on the side together with a kiwi. Delicious, big and fresh Sunday breakfast!

  
This oatmeal (excluding the peanutbutter for the topping) is 100% paleo-friendly. The whole breakfast is 100% gluten free, dairy free and free from added sugar!
