Warm & Creamy Coconut Chia Oatmeal

I have posted this recipe before, but it is so simple and so good that I just have to post it again! And I might have changed the amounts or the ingredients a little bit, HERE is the recipe from the first time I made this breakfast. Had the perfect morning today with a nice 10k run in the beautiful fall weather, and manage to run it under 45 minutes. Finished the workout with “8 minutes abs” from Youtube and then this amazing breakfast. So now I’m ready to take on this long workday (8.30-18.30!).

Warm & Creamy Coconut Chia-Oatmeal (1 portion)

  • 3 dl coconut milk
  • 3 tablespoons chia seeds
  • cinnamon & cardamom
  • 1/2 zucchini, shredded

Toppings today:

  • crunchy peanut-butter from MyProtein
  • fresh figs
  • raspberries
  • mulberries
  • kiwi

-> This breakfast you need to prepare the night before (or at least 2-3 hours before you’re going to eat it). Start by mixing chia seeds, the milk, cinnamon and cardamom in a jar with a lid. Stir well and put the lid on and put in the fridge over night. In the morning, take it out and squeeze out the water from the shredded zucchini and add to the chia-pudding. Put in the microwave for 2 minutes. Take out and add your desired toppings. Try the combination of cinnamon, cardamom and crunchy peanut-butter! You will not be disappointed! 

 
This oatmeal is 100% paleo(just switch out the peanutbutter for almondbutter in the toppings), gluten free, dairy free, low fodmap diet & free from added sugar! Enjoy!
