Banana Coconut Scones (paleo)

Another new bread recipe I have come up with and just mixed together what ingredients I thought would fit together and end up good. It did not take long at all to make and it is 100% paleo, perfect for breakfast or as a snack with some fresh toppings.

Banana Coconut Scones (5 buns)

  • 1.5 dl almond flour
  • 1 dl coconut flour
  • 2 ripe bananas
  • 0.5 dl chia-seeds from Alivefoods
  • 1 tablespoon psyllium husk
  • 1-2 tablespoon coconut flakes
  • 2 tablespoons coconut oil
  • 1 dl water

-> Start by turning on the oven on 200 degrees C. Mix everything in a bowl and let stand for 5 minutes. Form into 5 balls and put on a baking paper. Flatten them a little if you want more flat scones. I added a sprinkle of connamon on top of them too. Put in the oven for 12 minutes. Take out and enjoy with a layer of almond butter!
