Saffron Chia-pudding

I have a new breakfast favorite. Warm saffron chia-pudding with peanut-butter! I will probably eat this almost every day until Christmas Eve haha. All the ingredients just tasted so well together and it doesn’t take long to make either! Just prepare the chia-pudding in the morning.

Saffron Chia-pudding (1 portion)

  • 2 dl coconut milk
  • 3.5 tablespoons chia seeds from Alivefoods
  • 0.5 g saffron
  • 1/2 large zucchini, shredded

Toppings (they are a must for this taste sensation!):

  • A LOT of crunchy peanut-butter (mine is from MyProtein)
  • raspberries
  • mulberries
  • gojiberries from Alivefoods

-> Prepare the chia-pudding the night before, mix together milk, chia seeds and the saffron in a jar with a lid. Put in the fridge until the morning. In the morning take it out and add the shredded zucchini, stir and put in the microwave for about 2 minutes. It works to eat it cold as well, it is just that I prefer to eat my breakfast warm. Then add the toppings and stir a little. ENJOY! 

This breakfast is 100% gluten free, dairy free, and free from added sugar!
