Creamy Coconut Vanilla Oatmeal

I experimented a little with a new oatmeal recipe this morning and it ended up being for sure one of my favorites! Looking forward to make this every morning the rest of this week hehe. If you like coconut, this will be a success breakfast for you!

Creamy Coconut Vanilla Oatmeal (1 portion)

  • 1-2 teaspoons coconut oil
  • 1 egg
  • 0.5 dl egg whites
  • 1 tablespoon coconut flour
  • 1 tablespoon fiberhusk
  • 1 dl coconut milk
  • 1 teaspoon vanilla powder from Alivefoods
  • 1/2 zucchini, shredded

-> Start by melting the coconut oil in a pot. Take off the heat and add the egg + egg whites, stir frequently so that no pieces form from the egg. Add the rest of the ingredients, except the zucchini, and stir until all mixed together. Put back on low heat and stir frequently. Be patient, it takes a while for it to get thicker. When it starts to become thick, add the shredded zucchini and stir well. Turn off the heat and let stand for a minute to thicken a little.

I got surprised how creamy it became and how good it tasted! For toppings today I had:

  

   
This oatmeal recipe is 100% paleo-friendly, just switch out the peanutbutter in the toppings to for example almondbutter to make the whole breakfast paleo. It is also all gluten free, dairy free, and free from added sugar!
