Also called “Oatless Oatmeal” because it’s 100% without any oats, but still creamy, filling, & delicious!
Banana Zucchini Oatmeal (1 portion)
- 1 large banan
- 2 tablespoons chia-seeds from Alivefoods
- 1 dl coconut milk
- 1 dl egg whites
- 1-2 tablespoons flax seeds
- 1 teaspoon Maca powder from Alivefoods
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1 teaspoon psyllium husk (fiber husk)
- 1/2 zucchini, shredded
-> Start by mashing the banana in a pot. Add the rest of the ingredients except the zucchini. Stir and turn heat on medium-high. Stir frequently until it starts to boil. Then add the shredded zucchini and stir until creamy. Take off heat and pour over to a bowl. Add your desired toppings.
You all who know me know that the topping can be the most important thing! Today I had an overdose of crunchy almond butter (as usual), raspberries, mulberries and gojiberries. DELICIOUS!
