Another new oatmeal recipe. This time I experimented with my favorite original recipe for Vanilla Coconut Oatmeal but switched out some ingredients and added some protein powder. I used a new protein powder with coconut flavor from BioTech USA which I got from Fitnessbutiken. Success!
Protein Coconut Oatmeal (1 portion)
- 1 tablespoon coconut oil
- 1.5 tablespoon coconut flour
- 1.5 dl coconut milk
- 1 dl egg whites
- 1 teaspoon psyllium husk
- 1 scoop coconut powder from BioTech USA
- 1/2 zucchini, shredded
-> Start by melting the coconut oil in a pot. Take off heat and add the egg whites, flour, husk and milk. Stir well and put back on heat. When it becomes thicker add the shredded zucchini. When it has the creaminess you like take it off the stove and add the protein powder and stir well. Add your desired toppings and enjoy!
