A combonation of two favorites for breakfast. Actually it works just as well as a mid-day snack, dessert or pwo as for breakfast. It is healthy, tastes delicious and keeps you full for a long time.
Vanilla Chia Oatmeal (1 portion)
-> Start by mixing half the milk with the chia seeds in a pot. Let stand for about 10 minutes. Then mash the banana together with the pudding. Add the rest of the milk, psyllium husk, vanilla powder and the egg. Turn on medium heat on the stove, bring to boil and stir frequently. When it gets thicker add the shredded zucchini and stir until it’s as creamy as you want it. Tak it off the heat and add the protein powder. Stir until it’s all well blended. Pour over to a bowl and add your desired toppings!

This heavenly bowl of chia oatmeal is 100% gluten free and free from added sugar! Depending on the protein powder you use it can also be dairy free.
Made this delicious and healthy summer cheesecake for the first time ever with Erika yesterday for Mid-summer. It turned out really great!
Strawberry Chocolate Cheesecake

Strawberry cheesecake topping
- 300g coconut cream (full fat)
- 300g cream cheese
- 0.5 dl raw honey
- 5 dl fresh strawberries (also works with frozen defrosted)
-> Start by turning on the oven on 175 degrees C. Put all the ingredients for the chocolate cake in a mixer and mix until smooth. Pour over the dough to a baking form with sides you can take off. Put in the middle of the oven for 8-12 minutes. We had it in for 8 minutes and it was perfect for us. Then take out to let cool.
For the cheesecake topping, mix the coconut cream, honey and create cheese in a bowl. Mix the strawberries in a separate mixer until smooth. Pour over the strawberry sauce to the cream and stir until all blended well.
When the chocolate cake is all cooled down, pour over the strawberry topping and put in the freezer for at least 3-4 hours.
Then take out and add fresh strawberries for topping! Take out the cake a little before serving it so it get easier to cut in.
This fantastic cake is 100% gluten free and free from added sugar.

-> Mix everything in a blender until smooth. Enjoy a delicious and refreshing smoothie!
Do you want it thicker you can add some yoghurt or quark or more bananas.

Banana Protein Slush (1 glass)
-> Take out the bananas from the freezer and wait about two minutes to let them soften a little. Put everything in a blender and mix until no chunks. Pour over to a glass and sprinkle some bee pollen on top! Fresh and delicious!
This smoothie is filled with healthy nutrients, is gluten free and free from added sugar. It also works perfectly to skip the protein powder and it’s then also dairy free and paleo friendly!
Want a ice cream without any sugar, lactose, additives and still taste really sweet and fresh? This is one of the easiest recipes and takes no time to prepare. It is also really easy to switch a ingredient to get a totally different flavor. Today I went with a vanilla flavor. Perfect for a warm sunny day!
Vanilla Banana Ice cream (1 portion)
-> Take the frozen banana pieces out of the freezer. Put in a bowl and pour over a little little water or milk. Use a stick.blender to make is smooth, halfway through add the vanilla power and stevia drops. If you like you can put it back in the freezer for 5-10 minutes to get it a little harder, or eat right away! My absolute favorite toppings for this one is crunchy peanut butter! I also usually add some berries and gojiberries.
This ice cream (without the stevia drops) is 100% paleo, gluten free, dairy free, vegan, free from added sugar and still DELICIOUS!
