Vanilla Oatless Oatmeal 

This is one of my standard breakfasts and it has been a while since I shared the recipe so here we go:

Vanilla Oatless Oatmeal (1 portion)

-> Start by mixing the chia seeds and milk in a pot and let stand for about 10 minutes. Then mash a banana in the pan and add all the rest of the ingredients except the zucchini. Turn on the heat on medium and stir frequently. When it becomes thick, add the shredded zucchini and stir. Take off the heat and pout over to a bowl. Add your desired tolling and enjoy!

This oatmeal is paleo-friendly, gluten free, dairy free and free from added sugar. Do you want th toppings paleo as well, just switch out the peanutbutter to for example almond- or cashew-butter!
